Breaking Bread: Amy Uses Nima to Double-check her Food
What’s your food identity, and how do you maintain it?
I have been living a strict 100% gluten free lifestyle for the last 9 years due to a severe gluten intolerance. I have also been dairy free and soy free for the last year.
Tell us a little about your gluten-free journey. What was it like when you started eating gluten-free? What challenges did you face?
I began having symptoms such as Acid Reflux and digestion issues 9 years ago. After a lot of trial and error, a false negative Celiac test and food eliminating, I made the switch to a completely GF diet. It was amazing, I felt great and was so happy with my new normal. However, 9 years ago there was not nearly the selection of GF foods that there are today. And what I did find, half of it didn’t have any taste and was like eating cardboard. Whenever we would go out to dinner, I was worried about what to order and would usually just go with a salad of sorts. It was not easy! Luckily for us with Celiac and Gluten Intolerances the food selection and flavor has come a long way.
What was your food life like before you had your Nima?
If I make the food, I am not as worried as when I visit a restaurant and am eating out. I constantly worry about whether or not the food is REALLY gluten free. Cross-contamination is also a big worry of mine as that also makes me very sick. I make sure to do my homework before eating out. We frequent restaurants that I know have GF options that are safe BUT there is always the “what if”. Our family also travels quite a bit which causes me to get anxious and worry about the restaurants and foods that will be available in new destinations. With my Nima, my anxiety over safe foods is eliminated.
What’s your food life like now that you have Nima?
It is comforting knowing that I have Nima as my foodie tool! Keeping me healthy and knowing that I am eating safe, gluten free foods.
What do you test with Nima? Has there been anything that surprised you wasn’t safe (according to Nima)?
I just got my Nima, so I have only tested food once so far. But it was Pizza, that we ordered gluten free, and we got a regular one instead. My Nima said, Gluten Found!
What do your friends, family, and/or doctors think about Nima?
They think it is SUPER COOL! My other gluten free friends are looking forward to traveling and eating out with me, knowing that Nima will be on our side!
When using Nima at restaurants, what has been your experience? Do you have a favorite Nima related story?
So, the reason why I ordered is a great story! I have been wanting one ever since I learned more about it at the Nourished Festival in San Diego that I visited a few months back – but this was the perfect reason to get it NOW! My husband and I had a date night, all 4 of our kids were at my Mom’s for the night and we were going to go out somewhere fancy and fun. Instead, we decided to just relax at home, watch NCAA Basketball and order a pizza. We ordered a gluten free buffalo chicken pizza, as we have from this particular restaurant many times. My husband went to pick up the pizza and as soon as he got home with it, we both looked at it and instantly knew that it was NOT gluten free. It did not look even remotely close to the crust we normally get from this restaurant. We called them and asked if it was possible that they accidentally gave us the wrong pizza. We were then told that it was “guaranteed 100% gluten free”. I of course was afraid to eat it and just had a side salad for dinner instead. I didn’t want to run the risk of getting sick on date night, when my gut told me that it was 100% gluten FULL. My husband and I sat on the couch and immediately ordered the Nima as we watched Basketball. And, you better believe that I saved a piece of that pizza in the refrigerator to test.
My Nima arrived 5 days later and I was able to test that pizza… which of course came back Gluten Found. I am so thankful for that reading and I am in love with my Nima!
