Gluten-Free Meals at Home for Spring Break

Gluten-free spring break
Lindsey is currently a Nima College Ambassador studying at the University of Iowa. She is a celiac warrior and a member of the University of Iowa’s Celi-Yaks Club.
 

Spring break provided me with the much-needed opportunity to make some gluten-free meals at home. I’ve been sick (both literally and figuratively) of school food and was ready to take control of my meals once again. For geographical reference, my family lives in Cedar Rapids, Iowa, and I purchase all of my gluten-free food from the Health Market at Hy-Vee. Onto the products!

Kite Hill Greek Style Vanilla Yogurt

Notes: I’ve started to suspect in the past couple days that I have a dairy sensitivity in addition to my celiac disease. However, I have yogurt almost every day with breakfast, so I figured I would try a dairy-free brand the last day of break. The Kite Hill Greek-Style Yogurt is sweeter than the typical yogurt I eat but just as thick.

Noosa Vanilla Bean Finest Yoghurt

Notes: This is the yogurt that I typically eat. It is thick and creamy without being Greek style. I usually get the 4-pack instead of the individual Noosa cups.

KIND Peanut Butter Whole Grain Clusters

Notes: A nutty, crunchy, and filling granola. Doesn’t taste as sugary as other granola brands I’ve consumed.

 

La Tortilla Factory Gluten Free Ivory Teff Wrap

Notes: La Tortilla Factory wraps are the softest and most flexible gluten-free wraps I’ve had yet to encounter. This one was used for a grilled chicken ranch wrap. So yummy!

 

Hy-Vee Gluten Free Pepperoni Pizza

Notes: The Johnson Avenue Hy-Vee in Cedar Rapids sells these gluten-free pizzas, made by the Italian cuisine department, and they can be found in the deli area of the store. The pizza tasted just like a traditional thin-crust pizza! They are also generous with the cheese and pepperoni slices.

Udi’s Italian Sausage Lasagna Frozen Meal

Notes: A traditional lasagna with a little kick to it. I had already cut it in order to get a noodle, which is why it looks – well, not like lasagna. I usually eat the Amy’s brand vegetable lasagnas, so it was nice to have one with meat in it. However, the Udi’s lasagna is smaller than the Amy’s lasagnas.
